VINIFICATION: Mechanical harvesting of the grapes, immediate separation of the skins by soft pressing. Cleaning the must. Fermentation at controlled temperature for 10 days in steel tanks. It is then fermented in autoclaves (the Martinotti method) for at least 30 days. CHARACTERISTICS: Pale straw yellow color with a fine and persistent pearl layer. Slightly aromatic and the wine has an intense and persistent aroma with hints of acacia flowers and wisteria. The taste is slightly soft, but balanced with a pleasant sour tone.
